Maceration
The alcohol acts as a solvent and over a period of time the flavours and colourings are extracted from the ingredients.

Biodynamic Farming
Treats farms as unified and individual organism emphasizing balance of the holistic development and interrelationship of the soil, plants, animals as a closed, self-nourishing system. Methods unique to the biodynamic approach include the use of fermented herbal and mineral preparations as compost additives and field sprays and the use of an astronomical sowing and planting calendar


Rozendal

Rosendal Farm
Rozendal Farm comprises of 6ha of old vines, 4ha of pastures, 2ha of gardens and living space and 13ha of forest and fynbos. The farm is situated in the Jonkershoek Valley on the border of Stellenbosch, at the foot of the Jonkershoek Mountains.

Since 1994 Rozendal is managed biologically (bio+logical = biological) with an environmental and health conscious approach, which ensures clean air and pure water. In May 2001 we switched to Biodynamic farming methods and have become members of the Biodynamic Agricultural Association.


We have a mixed farming operation including vegetables and animals (dairy cows and horses).  All life is encouraged. Our philosophy of food and health has culminated in these unique products.

Rozendal Speciality Vinegars
Rozendal Vinegar is made from a good Bordeaux-style wine. 

The natural acid fermentation is allowed to take place in small oak barrels and matured for a minimum of three years.  By allowing this process to take place in the presence of the vinegar “mother” a pure, stable, enlivened product is created with health enhancing properties.

Our vinegars are macerated with a selection of high-quality herbs chosen for both their medicinal and culinary properties.

Lavender: This vinegar is infused with organic lavender grown on our farm. Try a vinegar reduction; heat in a large saucepan and allow to simmer until caramelized. 
Serve hot or cold with roasted venison or vegetables. Enjoy!

Fynbos: This vinegar is macerated with buchu, honeybush tea, rose geranium, wild olive, wild rosemary and grape must.
This vinegar is a celebration of South Africa’s unique Cape Floral Kingdom.  We have chosen these Fynbos herbs to reflect the rich biodiversity of the Cape Biome and for their medicinal properties.  Enjoy a truly South African flavour using this unique vinegar!

Mixed: This vinegar is macerated with green tea, chili, carob, lavender, kelp, sweet pepper and grape must.  Use as an aperitif, or mix with water for a refreshing quencher.  Pickles, marinades, dressings; the uses are abundant!

Gift Pack: Consists of 4 x 50ml bottles, Fynbos, Lavender, Mixed and Essentia. In a very attractive case this makes a great gift for any time of the year or if you wanted to try all four you can do so without having to buy big bottles of each.
